Apple Butter
Apple Butter
3 lbs. peeled, cored and cubed apple
1-1/2 cups apple cider
1/2 cup honey
1 tbsp. lemon juice
1 tsp. cinnamon
1/2 tsp. vanilla extract
1/4 tsp. ground allspice

Prep: 15 minutes, Cook: 1 hour, Makes: about 1 cup

1. Place all ingredients in a large saucepan.* Bring to a boil, then reduce heat and simmer, covered, for 20 minutes or until apples are tender.

2. Let cool slightly, then puree in a blender or food processor until very smooth.**

3. Transfer back to saucepan and cook over medium heat for 40 minutes more or until mixture is very thick, stirring frequently. Stir almost constantly during the last 5 minutes of cooking to avoid burning. 

*Cook in a tall pot or cover with a spatter screen to keep your cooktop clean.

**Use caution when blending hot liquids. Hold blender lid down with a kitchen towel while blender is running.
