Pomegranate Glazed Carrots
Pomegranate Glazed Carrots
1 cup POM Wonderful Pomegranate Juice (in our Produce Dept.)
2 tbsp. honey
1 lb. carrots, peeled and cut into 1-inch diagonal slices
1 tbsp. olive oil
1/4 tsp. sea salt
1/4 tsp. freshly ground pepper
1/2 cup chopped walnuts
1/4 cup dried cranberries (bulk bin #608)
1 tbsp. chopped fresh thyme

Prep: 10 minutes, Cook: 30 minutes, Serves: 6

1. Place juice in a small saucepan over medium-high heat. Cook for 15 minutes or until reduced to 1/4 cup; stir in honey. (May be prepared several days ahead and stored tightly covered in the refrigerator.)

2. Preheat oven to 400°F. Stir together carrots, oil, salt and pepper on a small baking sheet; cook for 15 minutes, stirring occasionally. Stir glaze into carrots and cook for 10 minutes more, stirring once or twice. Top with walnuts and cranberries and cook for 5 minutes more or until carrots are nicely glazed. Sprinkle with thyme. Recipe may be doubled.
