Bacon Egg Totchos
Bacon Egg Totchos
4 cups Ore-Ida Mini Tater Tots
2 tsp. Mexican seasoning blend
1 cups shredded Mexican blend cheese
1 cup Raley's Fresh Pico de Gallo (in our Produce Dept.)
1/4 cup real bacon bits or pieces
4 fried eggs, seasoned lightly with sea salt and pepper
Guacamole (optional topper)
Light sour cream (optional topper)
Salsa (optional topper)
Sliced green onions (optional topper)

Regular size tater tots are also great in this recipe, but will take a bit longer to cook.

Prep: 10 minutes, Cook: 20 minutes, Serves: 4 

1. Preheat oven to 400°F and place tater tots on a baking sheet. Sprinkle with seasoning blend and bake for 15 minutes or until very crisp, stirring once.

2. Push tater tots together and top with cheese, pico de gallo and bacon bits and cook for 5 minutes more.

3. Place an egg over each serving of tater tots and serve with any optional toppers.
