Champagne Chicken
Champagne Chicken
2 tbsp. butter
2 Raley's boneless, skinless chicken breasts
2 tbsp. minced shallots
1/4 cup chicken broth
1/4 cup champagne
1/4 tsp. herbes de Provence
2 tbsp. whipping cream
Freshly ground sea salt to taste
Freshly ground black pepper to taste
Fresh thyme leaves (optional garnish)

Prep: 10 minutes, Cook: 20 minutes, Serves: 2

1. Melt butter in a large skillet over medium heat. Coat chicken breasts with flour and add to skillet with shallots. Cook for 5 minutes on each side or until chicken is nicely browned.

2. Stir in chicken broth, champagne and herbes de Provence. Cook for 5 minutes more, turning chicken once or twice.

3. Stir in whipping cream and cook over low heat for 5 minutes more. Season to taste with freshly ground sea salt and pepper and sprinkle with fresh thyme leaves, if you like.
