Champagne Pear Vinaigrette
Champagne Pear Vinaigrette
3/4 cup champagne
1 ripe pear, peeled, cored and chopped
1/2 cup extra virgin olive oil
1/3 cup white wine vinegar
1/4 tsp. sea salt
1 clove garlic

Prep: 10 minutes, Cook: 10 minutes, Makes: 1 cup

1. Boil champagne with pear in a small saucepan for 5 minutes or until most of the liquid has cooked off. Let cool.

2. Puree in a small blender or food processor* with olive oil, white wine vinegar, sea salt and garlic until smooth. Cover and refrigerate until ready to serve. 

*Use caution when blending hot liquids. Hold blender lid down with a kitchen towel while blender is running.
