Chipotle Tangerine Carrots
Chipotle Tangerine Carrots
2 tbsp. butter
1 lb. peeled and thinly sliced carrots
1 tbsp. honey
1 small chipotle pepper, minced
2 tsp. adobo sauce from can
3 tangerines, peeled and chopped
Snipped fresh cilantro (optional garnish)

Prep: 15 minutes, Cook: 15 minutes, Serves: 4

1. Melt butter in a very large skillet over medium heat. Add carrots. Cook for 10 minutes or until carrots are soft, stirring frequently.

2. Stir in honey, chipotle pepper, adobo sauce and tangerines. Cook for 5 minutes more. Add more adobo sauce from can for extra heat, if you like. Garnish with snipped fresh cilantro.
