Maple Bacon Yams
Maple Bacon Yams
4 strips bacon
4 lbs. yams, peeled
2 tsp. pure maple syrup
1/2 tsp. sea salt

Prep: 15 minutes, Cook: 30 minutes, Serves: 6

1. Cook 4 strips bacon until very crisp in a very large skillet. Remove and drain on paper towels.

2. Peel yams and cut into 3/4-inch cubes; add to skillet and cook for 10 minutes or until nicely browned. Cover and cook for 10 minutes or until cooked through.

3. Drizzle with maple syrup and sprinkle with sea salt; stir to mix and cook for 5 minutes more or until nicely glazed. Transfer to a serving dish and crumble bacon over top.
