2 (2.1- oz.) boxes Athens Mini Fillo Dough Shells, thawed
(4- oz.) Boursin Cheese OR
(4- oz.) soft goat cheese
1 cup diced cooked beets
1 tbsp. extra virgin olive oil
1 tbsp. white balsamic vinegar
Fresh thyme leaves
Walnuts, chopped and toasted

Prep: 10 minutes,  Makes: 30 appetizers

1. Spoon equal amounts of cheese into fillo shells.

2. Stir together beets, oil and vinegar and spoon over cheese.
Top with fresh thyme and walnuts.
