Pumpkin Walnut Cream Cheese Muffins
Pumpkin Walnut Cream Cheese Muffins
1 cup Raley's Chopped Walnuts
1/3 cup finely chopped crystallized ginger
1 cup canned pumpkin
1/2 cup milk
1/4 cup melted butter
1 egg, beaten
2 cups prepared baking mix (such as Bisquick)
1 cups brown sugar
1 tbsp. pumpkin pie spice
4 oz. cream cheese, cut into 1/2-inch cubes

Prep: 25 minutes, Cook: 20 to 25 minutes, Serves: 12

1. Preheat oven to 400°F and line 12 muffin cups with paper liners.

2. Stir together walnuts and ginger in a small bowl. Place halfthe mixture in a large mixing bowl and stir in dry ingredients.

3. Whisk together pumpkin, milk, butter and egg in a medium bowl. Add to dry ingredients, stirring just until dry ingredients are moistened. Fold in cream cheese and spoon into prepared muffin cups; sprinkle with remainingwalnut mixture.

4. Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.
