Brazilian-Style Collard Greens
Brazilian-Style Collard Greens
2 tsp. olive oil
4 cloves garlic, thinly sliced
2 shallots, thinly sliced
1 bunch collard greens, stems removed and thinly sliced
Kosher salt to taste

Recipe courtesy of Chef Justin Wangler of Kendall-Jackson. This is Chef Wangler’s favorite dish of the moment. His cousin’s wife from Brazil made these collard greens at Thanksgiving last year. It is a traditional Brazilian dish called couve. It is often served with Brazil’s national dish feijoda, which is a stew of beef, pork and beans.

Prep: 10 minutes, Cook: 5 minutes, Serves: 6

1. Heat olive oil in a large skillet over medium-high heat. Add garlic and shallots and cook until they just start to brown.

2. Add collard greens and cook just until wilted, approximately 2 minutes. Season with salt and serve.
