Crispy Tater Mini Burgers

100 Ore Ida Mini Tater Tots (from a 28-oz. bag), thawed
1-1/4 cups shredded aged Cheddar cheese
1/2 cup panko bread crumbs
Olive oil cooking spray
1 lb. lean ground beef
1/4 cup cooked, crumbled bacon
1/4 cup Ninkasi Prismatic Venn Lager
2 tsp. spicy brown mustard
2 tsp. Raley's Steakhouse Steak Seasoning
Baby kale or arugula leaves
Steak sauce

Prep: 30 minutes, Cook: 30 minutes total, Serves: 12

1. Mash tater tots, cheese and bread crumbs together using your hands until mixture forms a paste. (Mixture will be crumbly but will eventually come together.) Shape into 1-inch balls, then flatten in your palms, smoothing out the edges with your thumbs if they crack.

2. Coat patties on both sides with cooking spray. Cooking 4 potato patties at a time (or more if waffle iron is large), cook for 2 to 3 minutes or until golden brown. Keep covered with foil in a warm oven until all are cooked.

3. Stir together beef, bacon, beer, mustard and seasoning in a large bowl. Shape into 12 very flat patties. Cook in a large nonstick skillet over medium-high heat for 2 minutes on each side or until nicely browned.

4. Place a mini burger, greens and steak sauce between 2 potato waffles.
