High Energy Wraps
2 large whole grain tortillas
1 cup red pepper or plain hummus
1/2 cup roasted red pepper strips
1/2 cup shredded sharp Cheddar cheese
1/2 cup sliced green onions
1 cup lightly packed baby spinach

Prep: 10 minutes, Serves: 2

1. Lay tortillas on a flat surface and spread half the hummus over 2/3 of each tortilla (leaving one side open). Top each with half the red peppers, cheese, onions and spinach, in that order.

2. Roll up tightly (ending with the open side of the tortilla) and press to compress ingredients. Cut in half and wrap tightly until ready to serve.
