3 green plantains
Oil for frying
Salt to taste

Prep time: 5 minutes, Cook time: 10 minutes

Peel plantains and cut into 1/2-inch thick diagonal slices. Heat 1/2 inch of oil in a skillet. Add plantains and cook for about 5 minutes, turning once. Remove from oil and place between 2 pieces of paper bag. Smash with a rolling pin, then return to oil; fry until golden brown. Drain well on paper towels. Season to taste with salt. May be made 1 day ahead and refrigerated. Reheat in a 425°F oven for 5 minutes or until warm.

Makes about 26 plantain slices or 8 servings.
