Filipino Chicken Adobo
Filipino Chicken Adobo
5 lbs. Raley's boneless, skinless chicken thighs
1 cup soy sauce
1/2 cup vinegar
1/2 cup water
1/2 cup crushed garlic
1 tbsp. pepper
6 bay leaves
1/2 cup oil
Cooked rice
Sesame seeds (optional garnish)

You can make this gluten-free by opting for a gluten-free soy sauce.

Prep: 5 minutes, Cook: 45 minutes, Serves: 8 to 12

1. Place all ingredients except oil, rice and sesame seeds in a large pot and bring to a boil; reduce heat and simmer for 30 minutes.

2. Remove chicken and any large pieces of garlic from pot. Heat oil in a large pan. Add chicken and garlic and fry for 2 to 3 minutes or until browned on both sides. Once all chicken has been fried, add back to broth and simmer for 5 minutes. Sprinkle with sesame seeds, if you like, and serve with cooked rice.
