Holiday Cranberry Syrup
Holiday Cranberry Syrup
3 cups fresh cranberries
2 cups pomegranate juice
1 cup Raley's Sugar
1/2 cup golden raisins
4 cinnamon sticks
1 lemon, seeded and sliced

This sweet, tangy syrup makes a great substitute for maple syrup on pancakes, waffles or French toast.

Prep: 15 minutes Cook: 1 hour Makes: about 1¾ cups

1. Bring all ingredients to a boil in a medium saucepan. Reduce heat and simmer for 1 hour over very low heat, pressing down occasionally with a potato masher.
2. Let cool slightly, then carefully remove cinnamon sticks. Pour mixture through a fine mesh sieve set over a bowl and press all liquid out of solids with a ladle or a wooden spoon. May be prepared 2 weeks ahead and stored tightly covered in the refrigerator. To serve, warm and thin with a little water,
if necessary.
