Easy Herbed Mashed Potatoes
Easy Herbed Mashed Potatoes
4 lbs. Yukon Gold or red potatoes, or a mixture of both
3/4 cup Raley's Chicken Broth
1/4 cup Sunnyside Farms Butter
1 cup Bayview Farms Milk
3/4 tsp. sea salt
2 (6.5-oz) containers Alouette Garlic and Herb Cheese

Prep: 10 minutes Cook: 15 minutes Serves: 8

1. Cut potatoes into 1-inch cubes and place in a
large glass bowl with broth. Cover and microwave
on HIGH for 15 minutes or until tender when pierced.
2. Add butter to bowl and mash potatoes to your liking, chunky or smooth.
3. Stir in remaining ingredients. May be prepared a day ahead. Add extra broth or milk when reheating as potatoes will thicken as they cool.
