Apple Cider Gravy
Apple Cider Gravy
1 cups apple cider (we like Barsotti)
1/3 cup Sunnyside Farms Butter
1/3 cup Raley's Flour
3 cups chicken or turkey stock
1/2 cup turkey drippings
2 tsp. chopped fresh rosemary
2 tsp. thyme
3/4 tsp. poultry seasoning
3/4 tsp. poultry seasoning
Freshly ground sea salt and pepper to taste

Prep: 10 minutes Cook: 20 minutes Serves: 12

1. Place cider in a small saucepan and cook until reduced to 1/2 cup.
2. Melt butter over medium heat in a large saucepan. Stir in flour and cook for 2 minutes or until mixture begins to bubble.
3. Slowly whisk in stock, then stir in reduced cider and turkey drippings and bring to a boil. Reduce heat and simmer for 15 minutes or until gravy is as thin or thick as you like, cooking longer for a thicker consistency. Stir in herbs and seasonings.

Shortcut Apple Cider Gravy: Prepare Apple Cider Gravy as directed above using 3 tbsp. apple juice concentrate and 1 tbsp. Kitchen Accomplice Reduced Sodium Chicken Broth Concentrate in place of reduced cider and turkey drippings. Use 3/4 tsp. dried rosemary and dried thyme in place of fresh herbs. Add a few drops of Kitchen Bouquet for color, if you like.
