Easy Lemon Thyme Corn
Easy Lemon Thyme Corn
3 tbsp. Sunnyside Farms Butter
1 very large onion, chopped
1 cup diced red bell pepper
1 (32-oz.) bag Raley's Frozen Corn, thawed
1 (10-oz.) package Raley?s Chefs? Menu Lemon Garlic Sauce (in our Meat Dept.)
1 tsp. dried thyme
Freshly ground sea salt and pepper to taste
1 cup grated Parmesan cheese

This super side is diabetic-friendly and gluten-free.

Prep: 15 minutes Cook: 15 minutes Serves: 12

1. Melt butter in a very large shallow pot or skillet over medium-high heat. Add onion and cook for 10 minutes, stirring frequently.
2. Stir in bell pepper and corn and cook until any excess liquid has cooked off.
3. Stir in Lemon Garlic Sauce and thyme and cook over low heat for a few minutes more to heat through. Season with salt and pepper and stir in Parmesan.
