 Berry Quinoa Salad
Berry Quinoa Salad
1-1/3 cups water
1 cup quinoa
4 cups lightly packed baby spinach
1/4 of a small red onion, very thinly sliced
1/2 cup Raley?s Freeze Dried Strawberries
1/2 cup Raley?s Freeze Dried Blueberries
1/4 cup sliced almonds, lightly toasted
3 tbsp. extra virgin olive oil
3 tbsp. raspberry or white balsamic vinegar
1 tbsp. sugar
1/2 tsp. sea salt or to taste
Freshly ground pepper to taste

Prep: 15 minutes, Cook/Stand: 22 minutes, Chill: 1 hour, Serves: 4

1. Bring water and quinoa to a boil in a medium saucepan; reduce heat and simmer, covered, for 12 minutes. Remove from heat and let stand for 10 minutes. Fluff with a fork then chill for at least 1 hour. (May be prepared several days ahead.)
2. Whisk together all dressing ingredients in a large bowl. Add quinoa, spinach and onion and toss gently to coat with dressing.
3. Sprinkle with dried fruit and almonds.
