Stout Pot de Crème
3/4 cup stout or chocolate stout
1/2 cup heavy cream
1 tsp. vanilla extract
1 (10-oz.) bag bittersweet chocolate chips
4 Raley?s Eggs
1/2 tsp. sea salt
Whipped cream and Maldon sea salt for topping (optional)
1/4 cup crumbled biscotti cookies
1/4 cup chopped toasted hazelnuts (or almonds)

Prep: 15 minutes, Cook: 5 minutes, Chill: Several hours, Serves: 8

1. Stir together stout, cream and vanilla in a medium saucepan over low heat. Bring to simmer, turn off heat and set aside.

2. Place chocolate chips, eggs and salt in a blender and blend until chocolate is finely chopped and mixture forms a paste. Slowly pour into hot cream mixture, whisking until chocolate is melted and the mixture is thickened and smooth.

3. Spoon into 8 small dessert cups and chill well. Top each serving with a dollop of whipped cream, a spoonful of biscotti and nuts and a pinch of Maldon salt, if you like.
