1 tbsp. oil
2/3 cup celery chopped
2/3 cup onion chopped
2/3 cup carrots chopped
1 (20- oz.) package hot or sweet turkey Italian sausage, casings removed
1 (49.5- oz.) can Raley's Fat Free Reduced Sodium Chicken Broth
1 (14.5- oz.) can Italian style diced tomatoes
3 cups red lentils (bulk bin #660)
1 cup red wine
2 tsp. basil
Grated Parmesan cheese
Prep time: 10 minutes, Cook time: 1-1/2 hours
Makes: 8 hearty servings

Heat oil in a large pot; add mirepoix and sauté over medium-high heat for 5 minutes. Add sausage, breaking into small pieces with the back of a wooden spoon; cook for 5 to 10 minutes more to brown. Stir in remaining ingredients except cheese and bring to a boil; reduce heat and simmer, covered, for 1 hour 15 minutes. Serve with grated Parmesan cheese, a green salad and slices of rustic European Style Bread from our Bakery.
