Ginger Pork Pot Stickers
Ginger Pork Pot Stickers
1 lb. ground pork
1 cup very thinly sliced Napa cabbage
1/4 cup sliced green onion tops
1/4 cup Soy Vay Veri Veri Teriyaki Sauce (you may substitute another thick teriyaki sauce)
1 tbsp. minced fresh ginger
50 round pot sticker wrappers
2 tbsp. vegetable oil, divided
2/3 cup chicken broth, divided

Prep: 25 minutes, Cook: 22 to 24 minutes, Makes: 50 pot stickers

1. Stir together pork, cabbage, green onions, teriyaki sauce and ginger in a medium bowl. Place a heaping teaspoon of filling in the center of each pot sticker wrapper. Brush water around the edges and fold up to enclose filling.

2. Press firmly until edges are sealed well. To cook, heat 1 tbsp. oil in a large skillet. Place half of pot stickers in skillet, seam side up. Cook for 2 minutes or until bottoms are golden brown, tipping skillet to evenly distribute oil.

3. Add 1/3 cup chicken broth to skillet; cook, covered, over medium heat for about 8 to 10 minutes until liquid has been absorbed and pork is cooked through. Remove from skillet and repeat with remaining oil, pot stickers and broth.

Fess Parker White Riesling - This Santa Barbara white has a hint of sweetness, balanced with crisp acidity, making it the perfect complement to the ginger of the pot stickers.
