Grain Crusted Quiche with Greens and Herbs
Olive oil cooking spray
1? cups water
2/3 cup freekeh
1/2 cup lightly packed almond flour
1/3 cup grated Parmesan cheese
1/2 tsp. coarse ground black pepper
2 tbsp. extra virgin olive oil
1 very large onion, halved and sliced
4 cloves garlic, minced
2/3 cup shredded smoked mozzarella
2/3 cup Parrano cheese (in our Deli)
1/4 cup grated Parmesan cheese
2 cups torn mustard greens
2 cups curly kale
2 cups Swiss chard
2 cups baby spinach
1 tbsp. chopped fresh rosemary
1 tbsp. oregano
1 tbsp. Italian parsley
1 cups fat-free or regular half & half
1/2 cup part-skim ricotta cheese
1/2 tsp. sea salt
4 eggs

The ancient grain freekeh is toasted young, green wheat that’s slightly nutty, chewy and smokey. This quick-cooking superfood is high in fiber, protein, iron and calcium.

Prep: 30 minutes Cook: 1 hour, 40 minutes total Serves: 10

1. Preheat oven to 425°F and coat a 9-inch springform pan with cooking spray. Bring water and freekeh to a boil in a medium saucepan; reduce heat and simmer, covered, for 10 minutes. Fluff with a fork and let cool; stir in remaining crust ingredients and press evenly onto the bottom and sides of prepared pan. Bake for 20 minutes.

2. While crust is cooking, heat olive oil in a very large skillet over medium heat. Add onion and cook for 30 minutes, stirring frequently. Remove from heat and stir in garlic. Spread on the bottom of crust and top with mozzarella, Parrano and Parmesan cheeses.

3. Microwave greens on HIGH for 3 minutes. Let cool slightly, then roll up in a clean dishcloth, squeezing to remove all moisture. Separate with your fingers and place greens and herbs over cheese.

4. Beat remaining filling ingredients well in a large bowl and carefully pour into pan. Reduce heat to 375°F. Bake for 55 minutes or until center is set when pan is gently shaken. Let stand for 5 minutes before removing sides from pan.
