Roasted Sweet Potato and Avocado Wrap
Roasted Sweet Potato and Avocado Wrap
Sweet Potatoes:
1 large sweet potato, cut into thick slices
2 tsp. olive oil
1/2 tsp. chili powder
1/2 tsp. paprika
12 tsp. cinnamon
1/2 salt
1/2 tsp. pepper

Large tortillas or sprouted grain wraps
1 avocado, sliced
Sun-dried tomatoes
Diced marinated artichokes
Sliced almonds, toasted

Prep: 25 minutes, Cook: about 20 minutes, Serves: 4

1. Preheat oven to 350°F. Mix all sweet potato ingredients except potatoes. Toss sweet potato slices in oil and seasonings and bake until browned and cooked through, about 15 to 20 minutes.

2. Spread tortillas or wraps with 2 tbsp. of hummus. Top each with sweet potato and sliced avocado, sun-dried tomatoes, artichokes and lettuce. Sprinkle toasted almonds on top. Roll up each tortilla and wrap in a paper towel, then wrap in aluminum foil and chill in the refrigerator for at least 2 hours before serving.
