White Bean, Pear and Cranberry Crostini
White Bean, Pear and Cranberry Crostini
1? cups cooked white beans or 1 (15-oz.) can small white beans, drained and rinsed
3 tbsp. olive oil
Juice from 1 lemon
Salt and pepper to taste
24 baguette slices
Olive oil
1 large ripe pear, halved and cored
2 tbsp. chopped dried cranberries
2 tbsp. chopped walnuts
Honey (optional)

Prep: 30 minutes, Cook: 1 to 2 minutes, Serves: 12

1. Puree beans, olive oil and juice in a small food processor; season with salt and pepper.

2. Lay baguette slices on a baking sheet and brush lightly with olive oil; broil for 1 to 2 minutes or until lightly browned.

3. Cut each pear half into 12 thin slices.

4. Spread equal amounts of white bean spread onto baguette slices and sprinkle each with equal amounts of dried cranberries and walnuts. Top with pear slices. Drizzle lightly with honey, if you like, and serve immediately.
