Spanish Pork Tenderloin
Spanish Pork Tenderloin
3/4 lb. boneless Raley's pork tenderloin, cut into 2 pieces
2 tbsp. smoked paprika
3/4 tsp. garlic salt
1/4 tsp. oregano
1/4 tsp. coarse ground pepper
1/2 tbsp. extra virgin olive oil
1/3 cup dry sherry

Prep: 5 minutes, Cook: 30 to 35 minutes, Serves: 2

1. Rinse pork and pat dry. Stir together paprika, garlic salt, oregano and pepper in a small dish; sprinkle evenly over pork.

2. Heat oil in a medium skillet until very hot; add pork and cook until well browned on all sides. Add sherry to skillet; cover tightly and simmer for 15 to 20 minutes or until pork is cooked through.

3. Remove cover and simmer for a few minutes more to reduce sauce slightly.
