Italian Shrimp Scampi
1/4 cup butter
3 tbsp. minced fresh fennel (white base only)
3 large cloves garlic, minced
1 lb. shrimp, peeled and deveined
1/4 cup white wine
2 tbsp. fresh lemon juice
Hot cooked pasta

Garnish with chopped fennel tops and basil for a little added flavor.

Prep: 10 minutes, Cook: 15 minutes, Serves: 4

1. Melt butter in a medium skillet. Add fennel and garlic; cook over low heat for 8 minutes, stirring frequently.

2. Increase heat to medium and add shrimp to skillet. Cook, stirring constantly, for 5 minutes more.

3. Stir in wine and lemon juice and cook for 2 minutes more or until shrimp is pink. Serve over pasta.
