Smithwick's Fish & Chips
Oil for frying
1 lb. russet potatoes, cut into strips
Salt to taste
1 lb. cod fillets, cut into 3- to 4-inch pieces
1 cups flour
1 tsp. salt
1/2 tsp. pepper
1 cup Smithwick's Irish Ale
1 egg, lightly beaten
Malt vinegar

Prep: 20 minutes, Cook: 20 minutes, Serves: 4

1. Preheat oven to 375°F.

2. Heat several inches of oil in a large pot until very hot. Add potatoes and cook until golden brown; remove with a slotted spoon and drain well.

3. Season with salt and transfer to a baking sheet; keep warm in oven.

4. Rinse cod and pat dry. Stir together flour, salt and pepper; stir in ale and egg. Dip each fish fillet in batter and drop into hot oil.

5. Cook for 5 to 7 minutes, carefully turning once, until golden brown; drain well. Serve hot with "chips," malt vinegar and a cold pint of Smithwick's.
