Smoked Paprika Shrimp with Grapefruit Salsa
Smoked Paprika Shrimp with Grapefruit Salsa
1 cup diced cucumber
1/2 cup chopped cilantro
5 tbsp. lime juice, divided
2 large grapefruit, peeled, segmented and diced
1/2 red onion, diced
1 jalapeno pepper, minced
Salt and pepper
3 tbsp. extra virgin olive oil
1 lbs. peeled and deveined shrimp
2 tsp. smoked paprika
2 tsp. ground cumin
2 cloves garlic, minced

Prep: 15 minutes, Cook: 5 minutes, Serves: 4

1. Mix together cucumber, cilantro, 2 tbsp. lime juice, grapefruit, onion, jalapeño pepper, salt and pepper in a medium bowl; set aside.

2. Heat oil in a large skillet over medium heat. Add shrimp, smoked paprika, cumin and garlic; cook for 2 minutes. Add 3 tbsp. lime juice, salt and pepper and cook for 3 minutes. Serve with salsa.
