Vegetarian Jerk Tacos
Vegetarian Jerk Tacos
1/4 cup lime juice
2 tsp. sugar
1/3 cup coarsely shredded carrot
1/3 cup small cubes peeled cucumber
1/3 cup small strips red onion
1 medium plantain,* peeled and halved horizontally
1 cup diced tomato
1/2 cup World Harbors Jerk Sauce
12 white corn tortillas

Prep: 15 minutes, Cook: 6 to 7 minutes, Serves: 4

1. Stir together lime juice and sugar in a small bowl. Add carrot, cucumber and onion and toss well to coat; set aside to marinate.

2. Grill plantains on a well-oiled grill over medium heat for 5 minutes or until nicely charred, turning several times. Remove from grill and cut into 1/4–inch cubes. Place in a medium bowl with tomatoes and jerk sauce.

3. Lightly grill tortillas until warm, then fill with equal amounts of tomatoes, plantain and pickled vegetables.

*Plantain should be mostly green but starting to brown in spots.
