Packet Grilled Fingerlings with Coriander and Dill
Packet Grilled Fingerlings with Coriander and Dill
1 lb. fingerling potatoes
1 tbsp. olive oil
3/4 tsp. salt
1/2 tsp. ground coriander
1/4 tsp. freshly ground black pepper
1 tbsp. chopped fresh dill
1/2 tsp. grated lemon zest
1 tbsp. lemon juice

If you don’t have coriander on hand, ground cumin makes an equally delicious substitute.

Prep: 10 minutes, Cook: 30 minutes, Serves: 4

1. Preheat grill to medium-high.

2. Combine potatoes, oil, salt, coriander and pepper in medium bowl and toss to coat.

3. Tear off an 18–inch long sheet of heavy duty foil. Place potatoes in center of foil. Bring long sides of foil together and fold twice to seal tightly, then fold and seal short sides. (Do not wash bowl.)

4. Place packet on grill and cook about 30 minutes, or until potatoes are tender.

5. Remove packet from grill and carefully open, avoiding escaping steam. Return potatoes to bowl. Add dill, lemon zest and lemon juice and toss to coat. Serve hot or at room temperature.
