Best Dad's Fiesta Egg Stack
Fiesta Egg Stack
8 eggs
1/2 cup fat-free half & half
1 tsp. Morton & Bassett Mexican Blend Seasoning
4 oz. sliced ham
1 cup shredded Cheddar cheese
2/3 cup Raley's Fresh Pico de Gallo
Additional Cheddar cheese and pico de gallo (optional)

Prep: 10 minutes, Cook: about 15 to 20 minutes, Serves: 4

1. Preheat oven to 350°F and spray a 9-inch square pan with nonstick cooking spray.

2. Combine eggs, half & half and Mexican seasoning in a medium bowl; whisk until blended and pour into prepared pan. Bake for about 15 minutes or until set.

3. Cut into four equal sections; place equal amounts of ham, cheese and pico de gallo on two egg sections. Top with remaining two egg sections; top each section with additional cheese and pico de gallo, if desired.

4. Bake for another 3 to 5 minutes or until cheese is melted. Slice each stack into 2 pieces and serve.
