Hearty Linguiça and Potato Burritos
Hearty Linguiça and Potato Burritos
1/2 of 1 (13- oz.) package linguiça, diced
2 cups Simply Potatoes Diced Potatoes with Onions
12 eggs, beaten
3 green onions, sliced
Salt and pepper to taste
1½ cups Raley's Shredded Mexican Blend Cheese
6 burrito size flour tortillas, warmed
Salsa or Raley's Fresh Pico de Gallo

Prep: 15 minutes, Cook: about 15 minutes, Serves: 6

1. Cook linguiça and potatoes in a large skillet over medium heat for 10 minutes to brown; remove from skillet and keep warm. Add eggs to skillet; cook and stir for 5 minutes or until eggs are set.

2. Stir in linguiça, potatoes and green onions; season with salt and pepper.

3. Remove from heat and top with cheese. Spoon into flour tortillas and roll up. Serve with salsa or pico de gallo.
