Savory Corn Fritters
Savory Corn Fritters
1 (8.5- oz.) package Jiffy Cornbread Mix
1 cup corn (fresh, canned or frozen and thawed)
1/2 cup minced red bell pepper
1/2 cup minced onion
1 1/2 tbsp. chopped fresh herbs
2 eggs
Oil for frying
Freshly ground sea salt (optional)
Prep time: 10 minutes,
Cook time: about 15 minutes

Combine all ingredients except oil and sea salt in
a large bowl until well mixed. Heat 2 inches of oil
in a large saucepan over medium heat. Drop
batter by rounded tablespoonfuls into oil. Fry,
turning once, until golden brown on both sides
and cooked through. Drain on paper towels and
sprinkle with freshly ground sea salt if desired.
Serve immediately.

Makes about 18 fritters.

To test if oil is at the proper temperature to begin
frying, put a small piece of bread in the oil. If it
sizzles nicely and begins to slowly turn golden, the
oil is ready.
