Old Time Cornbread
Old Time Cornbread
1 cup cornmeal
1/2 cup flour
1 tbsp. sugar
1 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
2 cups buttermilk
1 egg
3 tbsp. vegetable oil

Prep: 10 minutes, Cook: 25 to 30 minutes, Makes: 12 servings

1. Preheat oven to 450°F. Combine cornmeal, flour, sugar, baking powder, salt and baking soda in a large bowl. Whisk together buttermilk and egg; add to cornmeal mixture, stirring just until combined.

2. Place oil in a 10½-inch cast iron skillet or 9-inch square baking pan and place in oven for 10 minutes. Pour batter into hot pan; bake for 15 to 20 minutes or until a toothpick inserted in the center comes out clean.
