Cowboy Steak and Eggs
Cowboy Steak and Eggs
1 cup small grilled steak pieces
1 cup potato diced, cooked
1 tbsp. Stubb?s Bar-B-Q Spice Rub
1 tbsp. oil
1/2 cup tomato chopped
1/4 cup green onions sliced
8 eggs beaten
Salt to taste
Pepper to taste
Warm tortillas
Toss steak pieces and potato with rub. Heat 1 tbsp. oil in a medium nonstick skillet over medium heat; add steak mixture and sauté for 5 minutes. Stir in tomato and green onions; remove from skillet and keep warm. Add eggs to skillet; cook and stir until eggs are set. Stir in steak mixture, then season to taste with salt and pepper. Serve with warm tortillas and salsa.
