Grilled Vegetable and Bulgur Salad
Grilled Vegetable and Bulgur Salad
1 3/4 cups water
1 cup bulgur (Natural Foods Dept. bulk bin #606)
2 thick slices red onion
1 zucchini sliced 1/2 -inch thick
1 each: red and yellow bell pepper seeded and quartered
2/3 cup Organicville Olive Oil & Balsamic Organic Vinaigrette
1/2 cup chopped walnuts toasted
Prep time: 20 minutes,
Cook time: 10 to 15 minutes,
Stand time: 30 minutes,
Chill time: at least 1 hour

Bring water to a boil in a small saucepan. Stir in bulgur and remove from heat; cover and let stand for 30 minutes. Fluff with a fork and let cool. Grill vegetables over medium-high heat and cook for about 5 to 10 minutes or until lightly charred; remove from grill and cool, then cut into bite-size pieces. Add vegetables and vinaigrette to bulgur and toss well to coat. Cover and refrigerate for at least 1 hour. Top with walnuts just before serving.
