Spiced Chocolate Mousse
Spiced Chocolate Mousse
6 oz. bittersweet or semisweet chocolate, broken in to small pieces
1-1/4 cups heavy whipping cream, divided
1 (3-oz.) package cream cheese, softened
2 tbsp. light corn syrup
2 tbsp. dark rum
1 tbsp. cinnamon
2 tsp. ground ginger
1 1/2 tsp. vanilla extract
Additional whipped cream and shaved chocolate for garnish, (optional)
Prep: 20 minutes Chill: 4 hours Serves: 8

1. Melt chocolate in the top of a double boiler or in
the microwave; set aside.
2. In a bowl of an electric mixer, beat 1 cup whipping cream until
soft peaks form.
3. In the large bowl of an electric mixer, beat cream cheese for
about 3 minutes or until light and fluffy. Add corn syrup, rum,
cinnamon, ginger and vanilla.
4. With the mixer on low speed, slowly pour in melted chocolate,
scraping the sides of the bowl several times; beat
until combined. Add remaining 1/4 cup cream and beat until
thoroughly combined. Fold whipped cream into chocolate
5. Divide equally between 8 small wine glasses or cups and chill
for at least 4 hours. Garnish with whipped cream and
shaved chocolate before serving, if you like.
Wine Suggestion
Ironstone Cabernet Sauvignon - If you use bittersweet chocolate to whip up the mousse, this makes a lush pairing - or try a rich Zin.
