Feta Bread Salad
Feta Bread Salad
3/4 cup small grape tomatoes halved
1/2 cup crumbled feta cheese
1/4 cup red onion thinly sliced
1/2 red bell pepper thinly sliced
1/2 yellow bell pepper thinly sliced
1/2 English cucumber cut in half lengthwise,seeds removed and sliced
2 tbsp. fresh basil chopped
3 cups cubed bread lightly toasted
Vinaigrette (recipe follows)
Prep time: 20 minutes

Gently toss all ingredients except bread and vinaigrette together in a large salad bowl. Toss with bread and vinaigrette just before serving. Vinaigrette: In a small bowl, combine 2 tbsp. sherry, 2 tbsp. Raley's Balsamic Vinegar, 1 tbsp. minced shallots and 1 tsp. Dijon mustard. Gradually whisk in 1/2 cup extra virgin olive oil. Season to taste with salt and pepper.

Makes 4 to 6 servings.
