Sun-Dried Tomato Spread
Sun-Dried Tomato Spread
1 (8- oz.) block Raley's Neufchâtel Cheese, softened
2/3 cup roasted red bell peppers
1/3 cup California Sun-Dry Julienne Cut Sun-Dried Tomatoes, drained
2 cloves garlic
1/4 tsp. salt
1/4 tsp. coarse ground pepper
1/2 cup lightly packed fresh basil leaves

Prep: 10 minutes, Makes: about 2 cups

1. Puree all ingredients except basil in a blender or food processor. Add basil and pulse on and off to finely chop.

2. Cover tightly and refrigerate until ready to serve. May be made up to 4 days ahead. Serve with baguette slices, crackers or cubes of Nob Hill Trading Co. Focaccia (in our Bakery).
