Garlicky Eggplant Dip
Garlicky Eggplant Dip
1 eggplant, sliced in to 1-inch slices
1/4 cup Joyva Sesame Tahini
1 tbsp. lemon juice
1/2 tsp. salt
1 clove garlic

Prep: 15 minutes, Cook: 20 to 30 minutes, Makes: about 1 cup

1. Preheat oven to 350°F. Spray a baking sheet with nonstick cooking spray. Place eggplant slices on sheet and bake for 20 to 30 minutes, turning once, or until soft.

2. Let cool, then remove skin. Place eggplant and remaining ingredients in a food processor; process until smooth. Garnish with sesame seeds and green onions, if you like, and serve with pita chips and crudités.
