Wild Cranberry Chicken
Wild Cranberry Chicken
2 cups hot water
1 (8.8- oz.) box Uncle Ben's Long Grain & Wild Rice Fast Cook Recipe
1/2 cup chopped celery
1/2 cup dried cranberries
1 tsp. herbes de Provence
2 cups rotisserie chicken chunks
1/4 to 1/2 cup chopped pecans (optional), toasted

Prep: 10 minutes, Cook: 10 minutes, Serves: 4

1. Bring water to a boil in a medium saucepan. Stir in rice and seasoning packet, celery, cranberries and herbs. Bring to a boil again; reduce heat and simmer, covered, for 10 minutes.

2. Add chicken to pan; cover and let stand for 5 minutes. Sprinkle with pecans.
