Stocking Stuffer Potatoes
Stocking Stuffer Potatoes
4 medium-large russet potatoes washed
1/4 cup sour cream
2 tbsp. butter
Salt and pepper
6 tbsp. sharp Cheddar cheese shredded
6 tbsp. Swiss cheese shredded
1 cup ham diced
1/4 cup green onions (mostly dark green tops) sliced
Prep time: 15 minutes
Cook time: 20 minutes

Pierce potatoes with a knife and place in a microwave-safe dish. Cook on HIGH for 15 to 20 minutes or until very soft. Make a slit in the top of each and fluff potato with a fork. Stir 1 tbsp. sour cream and 1/2 tbsp. butter into each hot potato and season with salt and pepper. Top with half of the cheese and all of the ham and green onions. Sprinkle with remaining cheese. Return to the microwave and cook for 3 to 5 minutes or until cheese is fully melted.
