Jeweled Almond Bread
Jeweled Almond Bread
1 cup milk
3/4 cup sugar
2 packages quick rise yeast
1/2 cup butter, softened
2 eggs
1/2 tsp. salt
5 to 6 cups flour
1 (7- oz.) package Sun Maid Dried Fruit Bits
1 cup shelled walnuts
1 (7- oz.) tube almond paste

Prep: 30 minutes, Rise: 3 hours, Cook: 45 to 55 minutes
Makes: 2 loaves

1. Heat milk in a small saucepan until warm. Add sugar and stir to dissolve.

2. Place in a large bowl and sprinkle yeast over the top. Let stand for 5 minutes or until foamy. Add butter and eggs and beat well. Stir in salt and enough flour to make a soft dough.

3. Knead for 10 minutes or until dough is very smooth and elastic. (A heavy-duty mixer works well for this.) Knead in fruit and walnuts. Place in a lightly buttered bowl; cover and let rise for 2 hours.

4. Knead again and divide into 2 pieces. Press each piece into an 11-by-9-inch rectangle.

5. Crumble half of the almond paste over half of each rectangle; fold over to enclose and press lightly. Place on a baking sheet and let rise in a warm spot for 1 hour.

6. Preheat oven to 325°F. Bake bread for 45 to 55 minutes or until cooked through and golden brown. Serve warm or toasted with butter.
