Wilted Greens with Bacon
Wilted Greens with Bacon
2 strips thick cut bacon
1 clove garlic minced
1/4 cup chicken stock
1 bunch red chard rinsed and coarsely chopped
Salt and freshly ground pepper
1 to 2 tsp. balsamic vinegar
Cook bacon in a large skillet over medium skillet until crisp. Remove from skillet and drain all but 1 tbsp. fat. Add garlic and cook for 1 minute. Add stock and bring to a boil; stir in chard. Cook for a few minutes until greens are barely wilted. Season to taste with salt and freshly ground pepper, then drizzle with vinegar. Crumble cooked bacon over the top.
