Prosciutto Wrapped Fritattas
Prosciutto Wrapped Fritattas
3 strips Volpi Prosciutto (in our Deli)
1/2 cup chopped onion
1 cup coarsely chopped and lightly packed fresh spinach
2 tbsp. minced sun-dried tomatoes (not oil-packed)
2 egg whites
1 cups egg substitute
1/4 cup fat-free cottage cheese
2 tbsp. shredded Parmesan cheese
1 tsp. Morton & Bassett Italian Seasoning
1/2 tsp. garlic salt
freshly ground pepper to taste
Fat-free marinara sauce (optional)

Prep: 20 minutes, Cook: 30 minutes, Serves: 4

1. Preheat oven to 400°F and spray four 1½-cup ramekins with butter flavored nonstick cooking spray. Cut each prosciutto strip lengthwise into 3 pieces. Line the edges of ramekins with prosciutto, cutting into pieces where necessary; set aside.

2. Spray a small skillet with nonstick cooking spray. Cook onion over medium heat for 5 minutes, stirring frequently. Stir in spinach and sun-dried tomatoes and cook for a few minutes more; let cool.

3. Beat egg whites in a medium bowl until soft peaks form; stir in egg substitute, cheese, seasonings and spinach mixture. Pour into lined ramekins and bake for about 25 minutes or until eggs are set in the center. Serve with a spoonful of marinara sauce, if you like.
