Tarragon Bread and Cheese Salad
Tarragon Bread and Cheese Salad
6 cups 3/4 -inch hearty bread cubes
4 oz. Fiscalini Farms Tarragon Cheddar Cheese (in our Deli) sliced
1 (10- oz.) package small grape tomatoes halved
3 thin slices red onion
1 tbsp. fresh tarragon chopped
1/3 cup extra virgin olive oil
1/4 cup tarragon vinegar
1/2 tsp. sea salt or to taste
pepper to taste freshly ground
Prep time: 15 minutes, Cook time: 5 to 10 minutes, Chill time: 1 hour

Preheat oven to 450F. Place bread cubes on a
baking sheet and cook for 5 to 10 minutes or until toasty and firm on the outside, but soft on the inside; let cool. Crumble cheese into small pieces and place in a large bowl with bread, tomatoes, onion and tarragon. Whisk together remaining ingredients and drizzle over salad; toss well to coat. Chill for 1 hour, stirring occasionally.
