Parmesan Spinach and Squash
Parmesan Spinach and Squash
1 (8- oz.) package Earth Exotics Butternut Squash (or 8 oz. cubed fresh butternut squash)
6 tbsp. Buitoni Light Alfredo Sauce
1 cup fresh spinach lightly packed, coarsely chopped
2 tbsp. fresh Parmesan cheese shredded

Prep: 10 minutes, Cook: 7 to 9 minutes, Serves: 2

Place squash in a medium bowl and cover with plastic wrap. Microwave on HIGH for 5 to 7 minutes or until squash is very tender. Stir in Alfredo sauce and spinach; cover and microwave for 1 minute more. Transfer to 2 individual dishes and sprinkle with Parmesan; broil until golden brown on top.
