Beef and Blue Sandwiches
Beef and Blue Sandwiches
1/3 cup crumbled Point Reyes Blue Cheese (in our Deli)
2 tbsp. butter softened
1 1/2 tbsp. Dijon mustard
8 slices extra sourdough French sandwich bread
8 oz. thinly sliced roast beef (from our Deli)
16 thin slices hot house cucumber
1 cup watercress large stems removed
Freshly ground pepper to taste
Prep time: 15 minutes

Stir together cheese, butter and mustard in a small bowl; spread equal amounts onto bread slices. Pile beef, cucumber and watercress onto 4 bread slices; season with pepper and close sandwiches.

Makes 4 sandwiches.
