Peanut Soup
1 large onion
2 cloves garlic minced
1 (13.75- oz.) can Chicken Broth
1 (28- oz.) can crushed tomatoes
2 large sweet potatoes (about 2 lb.) peeled and diced
5 cups water
1 cup Skippy Creamy Peanut Butter
1/4 tsp. cayenne pepper
1/2 cup chopped peanuts (optional)
Prep time: 15 minutes
Cook time: 40 minutes

In a large saucepan, sauté onion and garlic in broth over medium-low heat for 5 minutes. Add tomatoes, sweet potatoes and water to the pan. Bring to a boil and simmer over medium-low heat for 30 minutes or until sweet potatoes are soft when pierced with a fork. Stir in peanut butter and cayenne pepper; let cool slightly. Puree in a food processor or blender (with the top secured). Return mixture to saucepan and cook until hot. Ladle into soup bowls and garnish with chopped peanuts, if desired.
